Corned beef should not be confused with other cured or salted beef products. For instance, pastrami is cured but also smoked and coated in spices; bresaola is an Italian air-dried, salt-cured beef served raw; and beef brisket, unless explicitly labeled and processed as corned beef, is simply uncured fresh meat. While they may share some preparation techniques, only corned beef undergoes the specific curing process with large-grained salt and nitrite/nitrate preservatives that define the product.
